Meatless Monday

Happy Monday  

I haven't posted a Meatless Monday meal in quite a while. 
I love salmon and it can't be beat for nutrition, taste and prep speed.

I put together a spicy-sweet rub for the salmon and a sour cream based sauce that hubby LOVED.  So I thought I'd pass it along and you can tailor it to your taste.  

In a small bowl, mix equal portions of brown sugar, chili powder, cumin (I used 1 tablespoon  each) with about 1 1/2 teaspoons coarse salt.  This would be enough for at least 1 lb salmon.  A pinch of cayenne would add a bit more heat.

Pat or rub the mixture onto the salmon.  I used two 6 oz pieces of fish.  Choose your cooking method: grill, broil, saute or roast.

I had a little bit of sour cream, two green onion stems, the last of the cilantro from the garden and limes.  Slice the green onion, chop the cilantro juice half of a lime. 

I combined them all for a really yummy sauce that was a nice contrast to the sweet-spicy salmon rub.  Of course you could use red onion, lemon juice and parsley or chives or what ever you wish and have on hand. 

This meal came together in about 20 minutes.
This could certainly work for other fish varieties.  What's your favorite fish.

Flatbread Foto


I'm taking an online food photography class, Souvenir Foto School: Food + Foto.  The way the class works is that there is a four course menu for the month.  Each week we have an assignment to photograph one course.  We are given recipes and we are to all photograph the same thing.  Of course everyone's interpretation of the menu course is personal so the photo styling varies.  And, some people choose not to cook so they purchase the food and then take the photo, which is acceptable in this class as it is about photography and not cooking skill.  

The first course, last week's photo, was flatbread or focaccia.  I choose to use one of my favorite recipes and this is my photo.

I thought I'd share this with you because the bread is REALLY good and not difficult.  The bread dough uses flour and cornmeal and has a nice texture.  I baked in on my grill and it only took a few minutes.  Click here for the recipe.  My adaptation used just sage and thinly sliced onions on the top of the bread.  I made about 6 "loaves" rather than the 12 described in the recipe.  I found that I can freeze the dough and use it at another time if I only want a few loaves at a time.

Monday Musings


Autumn is definitely here in southeast Michigan.  The weather is cool, the skies are gray and for now, the leaves are beautiful hues of orange, red and yellow.  
Hubby and I decided it was time we finally visit the Eastern Market in Detroit.  We have read about it for years but never put it on the calendar.  We live near several great Farmers Markets and shop them regularly but we thought we'd explore something new.

I did not expect to see such a beautiful structure housing a market and this is just one of the buildings on the 43 acres of the Eastern Market.  Open since 1891, up to 40,000 people vist the more than 250 vendors each Saturday.  

 These modern "sheds" are bright, clean, and spacious.

There are vendors outside of the sheds along covered walkways.

The variety and freshness of food is outstanding.

 Prior to shopping we had a delicious breakfast at the Russel Street Deli.
I had scrambled eggs with peppers, basil, asiago and provolone cheese.  Great homefries too!

I came upon this great shop, Savvy Chic.

Stepping into the shop is like entering Provence.  The eclectic boutique carries vintage and new home and garden goods, food items, art and vintage clothing.  I went home with a scented candle.

Several vendors caught my eye but I ran out of time.  I'll head back to the market soon...maybe to shop for the Thanksgiving Feast.
