Fruit Salsa

As I write this post, I have a peach and blueberry crisp in the oven.  But besides desserts, these fruits make a great accompaniment to pork, chicken, and certain fish.  

I treated the blueberries and peaches in same manner for each salsa adding onion, jalapeno, lime juice, salt and pepper and either fresh basil or cilantro.  The peach salsa is by far the sweeter and more flavorful salsa.  The blueberry salsa is more subtle depends on the jalapeno and fresh herb for most of it's flavor.  


Recipe - rough estimates.  Modify to your taste.
1 cup blueberries,  rough chopped or 
             2 small peaches, stone removed, peeled and rough chopped
1 med. jalapeno, seeded and finely chopped
1/4 cup chopped onion
salt and pepper to taste
juice of 1 lime
2 tablespoons chopped cilantro or basil


Combine all ingredients and allow to rest for about 30 minutes before serving so all ingredients can blend. 
Enjoy with grilled chicken, pork chops or tenderloin, salmon, scallops, swordfish.  Try different fruit and herb combinations.
