Today is the last full day at my house in the Bahamas.
I usually use the last two days to clean out the refrigerator. I love the challenge of making something yummy with what is on hand. I had all the ingredients for this great citrus, rice salad from Mark Bittman.
Fresh citrus makes this salad very "bright" tasting. The mint is an interesting flavor with parmesan and nuts but absolutely works. Hubby and I loved this salad with our blackened grouper. Click here for the NYTimes recipe.
